The Giarratana onion is a sweet onion, never pungent and with an intense but delicate aroma. The production period is from July to the end of August and can not be stored for a long time. To preserve all its unique aroma and its sweet and never pungent scent, the onion essence was born, which allows you to use its substance, aroma, flavor and sweetness all year round. The onion water of Giarratana, or rather the onion essence, is the soul of the onion itself and is extracted with natural methods. Onion water is ideal for risotto pasta and risotto that, while remaining white, have all the flavor of onion; to enrich an onion soup, in the cooking bottom of the fish all'acquapazza or all'isolana, to flavor the dough of bread or pizzas. Its use is inevitable in the preparation of cocktails, which has enriched the scenario of the use of onion in the world of bartenders.
