NanoFoodGuard - rapid detection of toxins in plant-based food production
We develop a solution to rapidly detect toxins in plant-based foods directly at the production sites.
A dietary transformation including an increase in plant-based food is regarded as one of the most impactful actions towards climate change and the environmental footprint of food systems. However, the plant-based food industry is facing problems ensuring food safety from harmful toxins such as the bacterial toxin cereulide. While many of the plant sources, such as soy, cereals and nuts are not new to the food industry, the way in which they are applied or processed is new and poses real challenges to the industry to ensure food safety. Current market-standard methods for cereulide toxin detection are expensive and slow and can lead to 2 week production down-times. The industry needs a better method for detecting these toxins. We aim to solve this big industrial problem by developing a solution to rapidly detect the presence of harmful bacterial toxins in plant-based foods directly at the production sites while the food is produced.
