"La Cesa" Barbera d'Asti Superiore DOCG 2021

The name we have chosen for this Barbera Superiore is
derived from the ancient owners of some of our land; In
fact, in the past they were part of the church's property,
and in Piedmontese dialect “CESA" means church.
Produced by selecting the best Barbera grapes of our
farm, ripe, not rotten and with high concentration of
sugars, follows the traditional method of fermentation in
red, with a long maceration on the skins in aim to
extract body, color and aromas. After a rest in concrete
tanks, a part of the lot (60%) of wine is racked into
French oak barriques, where it remains for at least 8-9
months. Inside barriques, thanks to the particular micro
oxygenation given by wood, tannins are refined and
become softer, the color is stabilized, body is rounded,
and wine takes also the typical hints of spices and
vanilla. The wine obtained is then mixed with a part,
which varies from year to year, of the same wine that has
not been in barrique, with the aim to obtain a product
with balanced aromas, where you can feel the taste of
origin grapes, and where the “wood taste" is not too
strong. Bottled in the summer, still rests at least six
months before being offered to consumers.
