GRAPE VARIETY : BARBERA - NEBBIOLO
The grapes are harvested from the end of August to the beginning of September.
The vinification takes place with de-stemming and placing the grapes in the press. The maceration lasts about 8 hours and it is permanently lightly pressed. (The yield of grapes into wine is 50%).The juice is decanted naturally and fermentation is spontaneous. Natural clarification and bottling take place at the beginning of March so that the fresh notes of the grapes are respected and preserved.
The colour is intense rosé with kept orange reflections. In the nose intense flavors of red fruits such as cherry and raspberry mix with hints of pomegranate and rose petals. The taste is dry, but a pleasant acidity and minerality is included. The finish is savory and long-lasted.
