Japanese crafstmen based in Brittany, France, we are specialised in the production of katsuobushi (hot smoked and dried skipjack tuna) used in Japanese and fusion cuisine. A versatile ingredient bringing natural umami to dishes, our wild fish is sourced from Dolphin Safe and Friend of the Sea certified fishermen. 100% fish with no additives, our skipjack tuna flakes are delicious as a topping and serve as a vital base for dashis and other bouillons and soup stocks including for ponzu, ramen, udon, soba, tare and other dipping sauces.
