Dr. Jovana Kojić is Principal Research Fellow at the Institute of Food Technology, University of Novi Sad, Serbia. As the leader of a research group specializing in the food-technological design of 3D-printed snack products, I oversee the development of nutritionally balanced, consumer-friendly formulations using sustainable, circular economy, and zero-waste technologies. My work integrates advanced scientific research with cutting-edge 3D printing technology to deliver innovative food products. At the Research Center for Food Technologies and Product Development, I focus on the study of food constituents, reutilization of food waste, bioactive compounds, and plant-based materials. My expertise extends to the development of chromatographic methods aimed at enhancing the nutritional value of foods, particularly those based on cereals and pseudocereals. With extensive experience in food product formulation and a strong foundation in research, I specialize in developing solutions that are technologically viable and meet high standards of consumer acceptance and innovation in food systems.
