Position: southward, terraced hill of 1.5m average height, slightly curved. Subject to weather changes, especially sun and wind from northwest.

Soil: calcareous stones on rock.

Variety: Nerello Mascalese 50%, Nerello Cappuccio 30%, Nero d’avola 15%, Nocera 5%

First Installation: 2007

Growing system: espalier

Density: 6000/ha

Agriculture: natural organic; limited use of chemicals; green pruning to remove excess grapes and shoots to improve quality and reduce parasitic contamination.

Yeald per hectar: 70000 kilograms

Harvest: hand-picking in the second half of September.

Vinification: traditional red, long temperature-controlled maceration with soft pressing.

Refining: first in steel tanks, then 1 year in new and old tonneaus, then six months in bottle.

Production: 6000 bottles

Organoleptic analisys

The wine shows a clear, intense and consistent rubin red color. Intense smell with a good complexity ad finesse, red rose and geranium bouquet, touches of ripen red fruits and fruit preserve, blackberries, cherries, black cherries, black pepper and cinnamon, together with some scents of minerals. Full-body wine, well balanced, intense in the mouth, soft, of good persistency and finesse.

Serving temperature: 18°C, in wide glasses

Alcohol: 13,5%

Pairing: roasted or casserole meat with Mediterranean aromas, wild game, soft and aged cheeses.
