KALYPSO Organic Eucalyptus Honey

Kalypso eucalyptus honey is a rare variety that is strongly connected to the territory of the Ionian coast; in fact, it is in a close area near the city of Crotone, where this particular type of eucalyptus (E. globulus) flourishes. Eucalyptus Globulus blooms in the month of September, so it is possible to produce an autumn honey with a thousand shades of color and fragrance. This honey tends to have a darker color and a more robust aroma than the summer honey of E. camaldulensis, which is the most commonly found variety. Dark amber to brown color, intense and balsamic odor, enveloping taste with notes of caramel and liquorice. Low-sugar flavor compared to other types of clear honey. Eucalyptus honey is particularly rich in antioxidants, especially flavonoids, so it is excellent in fighting free radicals and cell aging. It has pronounced antibacterial and antiseptic properties. It therefore represents an effective remedy against fever and colds. Eucalyptus honey is widely used in cooking; it can be easily combined with aged cheeses, but it finds interesting uses with meat particularly in marinades and in accompanying sweet and sour sauces.
