About

Service Description:
Product perception sessions designed and led by sensory analysts, carried out by a panel of chefs/product experts. This is not a trained panel but a group of individuals with extensive experience in evaluating food from a qualitative perspective, whose opinions are highly valuable for many companies. The panel includes research chefs from the technology center, faculty members from the Gastronomic Sciences School, as well as external chefs, cooks, baristas, and hospitality professionals.

Expert panels are particularly useful when the focus is on understanding product perception from a qualitative standpoint. These professionals have strong skills in identifying attributes and defects and are in close contact with a wide variety of products, culinary techniques, raw materials, and ingredients from diverse cultures. While the data obtained are not extrapolatable to the general consumer, who typically lacks such breadth of experience, the insights are highly valuable for companies that demand high product quality.

Service Objectives:

  1. Gather expert feedback on the quality of a new product.

  2. Explore the potential of a single ingredient in different preparations.

  3. Understand how the product is perceived when compared to others in the same category.

Client Benefits:

  1. Expert opinions to evaluate and improve product quality.

  2. Identification of the creative potential of ingredients across various preparations.

  3. Qualitative comparison to help position the product against competitors.
