About
Moscato is the true gold of Monferrato hills.
Widely cultivated in Montabone and also in our company, it gives us every vintage really outstanding wines.
Harvest take place in the first two week of september, when the grapes are fully ripe. Two vineyards are involved to forge this Moscato d’Asti: one, more exposed to the sunlight, where sugar content in the grape is very high, and another one where acidity level is higher, to balance the sweetness inside the wine.
The must obtained from the soft pressing of the grapes is purified and cooled quickly in aim to preserve the beatiful aromatic bouquet. Fermentation takes place in Autoclave (special stainless steel tanks that keep inside the carbon dioxide naturally comes from fermentation) at 18°C until it reaches at least 4,5% of alcohol and a pressure of 2 bars. After it is cooled, micro-filtered and bottled. No aging is needed.
This Wine, sweet and sparkling, perfectly match with every dessert, and is great to stir eggnog too. But it could be fun to try it with oysters or salted anchovies.
