"Cascina Cabonaldo" Brachetto d'Acqui DOCG 2024

Brachetto d’Acqui is one of our greatest masterpieces.

Produced with the homonymous grapes, is a red wine, sweet, sparkling and aromatic that has no equal in the world of wines. It is cultivated and vinificated by the Gallo’s Family since the beginning of their history as winemakers. Harvested in the end of august, it follows in the beginning the traditional skin contact fermentation, but after a couple of days, when the color and the aromas are perfect, the wine is filtered and cooled and the fermentation stopped. The second fermentation, called “presa di spuma” takes place in special tank called autoclave, where we can obtain the bubbles. Brachetto has unique aromas, and a brilliant ruby red color. It pairs well with chocolate cakes, fruit salads and its very interesting with cold cuts, parma ham and spicy food.
