About me
As a Food and Enterprise Consultant at SAC Consulting in Edinburgh, my expertise lies in sustainable food systems, helping communities thrive, and using data to make informed decisions. I am passionate about creating sustainable and resilient food systems. I help find ways to make food production and distribution environmentally friendly and economically viable, centring my work on environmental and economic sustainability, circular economy practices, life cycle assessment (LCA), and carbon assessment.
I have been actively involved in a range of diverse projects from finding environmentally friendly strategies for selecting appropriate packaging for food and drink products to enhancing land-based tourism and preparing Scottish agriculture for sustainable investments. I have also supported work on identifying emissions across the supply chain, from farm to processing, with a specific emphasis on the carbon footprint for the Welsh Livestock and developing Life Cycle Assessment models for food manufacturers to help evaluate the environmental impact of food production and distribution. I have worked with Digital Dairy Chain delivering a project on whey waste from cheese production to add value to new products.
