Ignazio Francesco Mauro Spadafora

Our story begins with Carmine Spadafora, at the end of the 19th century, in Calabria, in the hills of San Mauro Marchesato. The old mill, with stone millstones pulled by mules, began to produce oil using the ancient method of cold pressing. The tradition continued with Vincenzo Spadafora and saw the arrival in 1992 of Ignazio Mauro Spadafora, who, after finishing his studies, decided to continue the family business, introducing innovative equipment to improve the production and above all the quality of the oil. An extra virgin olive oil, highly appreciated on the market, is produced from local olives, grown in the Località Stefanizzi and tended by the company itself. The company has obtained the European certification for organic production, mainly due to the correct management of waste in favour of a circular economy. Our oil, called "Don Vincenzo", is produced in the mill of the farm of Mauro Spadafora Ignazio Francesco. The farm, together with the oil mill, is committed to applying a voluntary supply chain traceability system certified by CSQA (UNI EN ISO 22005/08), in addition to its organic certification (EU Reg. 848/2018).

Don Vincenzo is an organic product, traced and certified "from the field to the table", in order to guarantee the final consumer the food safety, origin and quality of the oil he is about to buy. It is sold both for family consumption and for collective catering, to be used in the preparation of simple and healthy dishes that encapsulate the entire Calabrian culinary tradition.
