For a winemaker, the memory of his first wine remains engraved forever! Manuel Olmo took over his parents' vineyards in 1999 and his first decision was to convert all to organic farming: a pioneering move 25 years ago.

Returning to his homeland after a long spell in Galicia, he decided to promote the indigenous Bobal grape variety, as the Galicians had already done with Albariño. Defending his culture is the best long-term gamble.

Manuel went on to create the PASIÓN wine range, which, beyond its strong Mediterranean roots, reflects the region's grape varieties and the legacy left to him by his parents.
