About

Nutrition has a great influence on health, so their relationship has been studied in depth for a long time. We investigate how food is digested and how it affects the intestinal flora, along with its effects on health. Our specific research lines are:

  • Supplementation and Precision Nutrition for digestive pathologies

  • Development and validation of new ingredients and foods aimed at specific population groups

  • Monitoring of metabolic processes with sensors based on photonic technology

  • Assessment of the impact of processing on the nutritional value and physiological effect of foods

  • Reduction of fats in food through the use of emulsions with low lipid digestibility

  • Use of model systems (cell cultures and C. elegans) to study the functionality and toxicity of substances

  • Application of molecular biology for the study of probiotics in functional foods

  • Development of tools based on information and communication technologies (ICTs) for the nutritional improvement of populations
