Nutrition has a great influence on health, so their relationship has been studied in depth for a long time. We investigate how food is digested and how it affects the intestinal flora, along with its effects on health. Our specific research lines are:

Supplementation and Precision Nutrition for digestive pathologies

Development and validation of new ingredients and foods aimed at specific population groups

Monitoring of metabolic processes with sensors based on photonic technology

Assessment of the impact of processing on the nutritional value and physiological effect of foods

Reduction of fats in food through the use of emulsions with low lipid digestibility

Use of model systems (cell cultures and C. elegans) to study the functionality and toxicity of substances

Application of molecular biology for the study of probiotics in functional foods
