Parallel Session n°1: Proteins of the future
This session, organised by the Protewin initiative and the PROTEBoost project (FoodWal), will immerse you in the field of alternative proteins, in our region and beyond. With international experts, we will explore and interrogate current and future protein alternatives, their challenges and opportunities. From plant to microbial proteins, including precision fermentation processes, we will discuss state of the art but also knowledge gaps and actual feasibility of replacing traditional meats derived proteins with these innovative products. As central as it can be in such a major (r)evolution of our food habits, the consumer acceptance question of alternative proteins will also be questioned.
