  • Adaptation and characterization of new crops resistant to climate change. Incorporation in food matrices

  • Application of extended reality and neuroscience tools for the evaluation of consumer perception in immersive environments

  • Structuring of liquid oil to replace plastic fats in food

  • Study of food microstructure to innovate and optimize sustainable processes and products in the food industry

  • Neuromarketing studies in food consumption

  • Formulation of functional foods for population groups with specific needs
