Ultrasonic inspection represents a reliable and affordable alternative for non-destructive and non-invasive food inspection and process monitoring. Depending on the product and/or process, it can be done with or without contact between the ultrasonic sensor and the food. Its reliability has been proven in the industrial environment to determine textural and compositional properties of products derived from cereals and meat, but its application to other sectors is a reality. Some examples of its application are the measurement of texture and ripening in cheeses, the composition of meat and the monitoring of crystallization processes in fats.
