IoT solution for real-time mayonnaise production quality control.
About
The Mayo-Q project, currently being carried out in collaboration with the company Cidacos, involves the development of a system that will provide reports on the quality of mayonnaise produced by Cidacos, with a particular focus on its fat content. This system will be certified using blockchain technology. Fat is a fundamental parameter for the quality of mayonnaise, as, according to regulations, the fat content of mayonnaise must be greater than 65%.
This initiative will provide Cidacos with an objective means of substantiating that each batch produced at its facilities adheres to the stipulated regulations. To this end, a NIRS sensor has been installed in the Cidacos production line, and a predictive model has been developed to provide the fat concentration of the mayonnaise in real-time for new samples. Concurrently, we have developed an IoT platform to collect the data from the sensors and generate a report that reflects the average fat content values of each batch. Once generated, the report will be certified using blockchain technology to ensure its immutability over time. The system is currently being validated on the Cidacos production line, with the aim of starting to market it in the months following the end of the project.
