About

Food waste is one of the major problems that must be faced to mitigate the effects of climate change. Applying concepts of the circular economy, we work on the recovery of by-products generated in the agri-food chain, providing them with added value, generating wealth, and wasting fewer natural resources. Our specific research lines are:

  • Comprehensive use of vegetable by-products to obtain products rich in bioactive compounds with application in the food industry and related

  • Revaluation of wild products for food use
